Valencian Paella
Paella is the most traditional dish of Valencian cuisine, especially on Sundays and with the family. It has many versions around the world, but the original is undoubtedly the one from the city of Turia. The ingredients are rice, bachoqueta, garrofón (bean) beans, crushed tomatoes, rabbit, chicken, and water.


Fideúa
Fideúa is another of the star dishes of Valencian cuisine. It’s made in the same pan as paella, but its contents are completely different, as it primarily uses seafood. Thus, it can be made with noodles, fish broth, cuttlefish or squid, monkfish, shrimp, crayfish, and even mussels. Can anyone think of a better delicacy for a successful celebration?


Baked rice
Better known in Valencia as “arrós al forn” (roasted rice in the oven), it’s another staple of Valencian cuisine, especially at home. This traditional dish is made in a clay pot with local produce such as rice, blood sausage, and tomato. Along with these, we’ll add chickpeas, potatoes, ribs, garlic, and chicken broth before putting it in the oven to create a signature dish. Tear it up
Do you like dipping bread into your dish? Esgarraet is the dish for you. This warm salad made with flaked cod, sliced peppers, garlic, and oil is a true delicacy for Valencians. The salty flavor of the fish contrasts perfectly with the sweetness of the pepper to create a delicious meal for any palate. Its name comes from the fact that the cod and pepper are flaked when preparing the dish. In the southern part of the region, we find an even more incredible variation of this dish known as espencat. In this dish, the pepper and cod are preserved, but baked eggplant is added to add even more flavor.


All i Pebre
This dish originates from the famous Albufera (water lagoon) in Valencia, where, in ancient times, the main ingredient in the dish was abundant: eels. It is prepared in a clay pot containing garlic and almonds to start the broth. Later, after removing the sauce and sauteing the paprika, a glass of water is added and the eel pieces are boiled with the potatoes for 20 minutes. After adding the mash obtained from chopping the almonds and garlic, we have one of the most traditional dishes of Valencian cuisine.
